Peaches & Cream Oats

I must admit, I love the old school peaches 'n' cream Quaker oatmeal. I haven't had it in decades, but I can still remember the taste as though it was yesterday. Those freeze-dried peaches mixed with powdered milk & sugar... it just tastes so good! BUT, it's also loaded with sugar & let's face it... freeze dried peaches lack any nutrition. 

So, as usual... I went on a mission to create a healthy version. Thanks to my slow-cooker, that mission was a success. 

Introducing PEACHES & CREAM OATS...

What you need:
Makes 8 servings
2C steel cut oatmeal
4C unsweetened vanilla coconut milk (or sub with soy, almond, skim, rice, etc.. milk)
2TBSP vanilla extract
3C sliced, peeled peaches (I used frozen)
Optional: plain Kefir as topping

How to:
Combine oats, milk, vanilla & peaches in crockpot. Simmer on low for 6-8 hours. 

Before serving, I like to top with 1/2C Kefir for added protein and extra creaminess. If you've never had Kefir, I must warn you that the plain version is sour, so you will probably want to add Stevia or another natural sweetener. If you'd rather skip th Kefir adventure... you can just stick w/ some additional milk to top it off. Enjoy breakfast for days!

For those of you who don't know much about Kefir, here's the skinny:
