It doesn't look pretty, but it's healthy & tasty.
Eating smart is tough enough when you're at home, but boy doesn't it feel impossible while traveling???
I've experienced this more than ever over the past 7 days, as my husband & I moved from Seattle to Salt Lake City - a 14 hour drive, pulling a uhaul, stopping in random small towns for a quick bite & crashing at hotels. BUT wait... that's not where it gets hard. For the 2 day road trip, I was prepared with healthy snacks (apples, trail mix, string cheese, water, carrots, peanut butter, etc).
The problem - When we got to SLC, didn't like the condo we lined up, decided not to move in & have now been living in a hotel. This means eating out A LOT, which I hate!! I don't trust what they're putting in my food, I want organic, I want more veggies & less fat, etc... let's just say I'm crazy picky.
My resolution - We found a Residence Inn with a fridge, stove, pans & all the necessities. We've still had to eat the occasional chicken sandwich from Subway or Rubio's mahi taco, but we've packed the hotel with healthy options.
A plus or a minus??? At the hotel we get free breakfast. Anything FREE these days is amazing, but FREE often means unhealthy... unless, you play it smart. This morning, I scooped a bowl full of their plain oatmeal, grabbed an apple & some nuts and headed back to the room. Then, I just sliced the apple, microwaved it for 45 seconds, scooped it on the oats & added a dash of my own unsweetened oatmeal. There it was, a free & healthy meal. This is while everyone else was chowing down on belgain waffles, muffins & sausage patties.
THINK healthy & you can make it work!
Oh, one last thing... right after this powerful meal, I hit the hotel gym ;-) Yay!
