Gluten-Free Sugar-Free Delights

My husband banned me from trying to make healthy desserts. He says it's not possible to make a sweet treat that's healthy AND tastes good. Boy have I proved him right time & time again... hence the ban. He got tired of being my guinea pig and choking down dry, hard, tastless hunks of "cookies".

Tonight, I'd like to give myself a round of applause... for I proved his comment wrong. For the first time I accomplished the impossible by whipping up these little cookie balls. They are sooo yummy & super healthy. They passed my biggest critic's taste test and we both had a hard time not polishing them off. Here's the recipe, try it out and you'll see how great a healthy treat (done right) can be.

What you need:
(Makes 6 cookies)
1/4C soy flour
2TBSP almond butter
2TBSP plain Greek yogurt (I like Trader Joe's 2%)
3TBSP mashed banana (you can also use no-sugar added applesauce)
10 drops liquid vanilla stevia (or 2-3 packets regular stevia & a little vanilla extract)
Optional: 2-3TBSP carob or chocolate chips
*Preheat oven to 250. Mix and mash everything together. Form into little balls. Place on greased baking sheet & bake 20-25 min.
