"Who would've thought?" That was my husband's response to my latest creation... the Tangy Lentil Feta Salad.
I had a bunch of leftover lentils, quinoa & grapefruit... and a hungry husband. So I searched through the fridge for some more additions & viola... out came this colorful, high protein, fiber-packed lunch.
This meal's ingredients can be switched & swapped to suit your taste... but I'm telling you, this exact recipe is great! If you're a vegan or veg, take out the salmon. Here's how I made this one...
What you need:
1/2C cooked lentils
1/2C cooked quinoa
2TBSP feta cheese
1/2TBSP olive oil
1TBSP balsamic vinegar
1/4C sliced grapefruit
1/4C shredded smoked salmon (try chicken or soybeans)
Veggies: sliced tomato, sliced avocado
Salt & pepper to taste
