Thai Basil Chicken

A couple months ago, I thought it would be fun for Tilman and I to plant some crops... and by crops, I mean something edible that might live despite my horrible gardening skills. So we headed to the garden center. Everything I saw seemed like too much work, so many rules about sunlight, watering, soil, trimming... yuck! It began sounding like a tedious chore and no fun at all. Until we stumbled upon thai basil in the produce section haha... it comes in it's own pot and doesn't require much maintainance. Plus it was only $3 so it wouldn't be so bad if it died in a week... ha!

We made our purchase and headed home feeling successful ;-) And our little plant is still going strong! I decided to take a bold step and remove it from it's own little home and we planted it in our backyard. The problem now... when does one ever use thai basil?? Last night.. that's when! I made thai basil chicken with rice noodles and it was awesome!



THAI BASIL CHICKEN

What you need:
1LB chicken breast
1TBSP yellow curry powder
2tsp cumin
2tsp crushed red peppers
1TBSP crushed garlic
1/2 diced onion, yellow
1 small red or yellow bell pepper (I used half of each)
1/4C chopped thai basil
salt to taste
1/4C oyster sauce

How to:
Put all ingredients (except oyster sauce) in the slow cooker on low for 4-6 hours. When chicken is cooked through, remove and shred. Place back into cooker and add oyster sauce. Simmer for 30 additional minutes. Cook rice noodles according to package and serve chicken over noodles. Top w/ additional basil!
