Eggstravagant Veggie Burrito

Check out what I had for dinner... Whipped it up in 5 minutes with ingredients that most people already have at home... 2 eggs, about one cup frozen mixed frozen veggies (broccoli, asparagus, squash, mushrooms - I like the stir stir fry combo), a few pieces of ham (lunch meat), a little avocado and a whole wheat tortilla. I also put some Taco Bell hot sauce on it :) My FAV!
Thaw veggies in microwave for a couple minutes. Then spray a small skillet with some cooking spray, add the eggs, vegetables and ham. Cook for a few minutes until eggs are done. Boom! Throw it on that wheat tortilla, add some sour cream, avocado, salsa and chow down!
