Steel Cut Oats

Steel Cut crockpot oats have been my go-to breakfast for the past several months... seriously, I've had some variation every morning! One of the many things I love about steel cut oats, is the versatility! You can throw in different fruit, seasoning, nuts, etc.. and make a totally different breakfast. Some of my favorite add-ins are coconut, cocoa powder, berries of all kinds, flaxseeds and apples. My latest batch was cooked with coconut milk, vanilla, cinnamon, wheat bran & mixed berries. Here's the recipe:

STEEL CUT CROCKPOT OATS

What you need:
Makes 8 servings
2C uncooked steel cut oats
1 can lite coconut milk
3C water
2C frozen mixed berries
1/2C wheat bran (optional)
1TBSP vanilla
cinnamon to taste



How to:
Combine all ingredients into slow cooker. Set on low and cook for 6-8 hours. In the morning, I like to top it with a scoop of low-sugar Greek yogurt, Stevia, a few fresh berries & a little unsweetened vanilla almond milk.
