Grilled Corn & Black Bean Spicy Salsa

I love trying new things... but sometimes it's tough actually getting yourself to take the chance a try a new food or a new recipe. We all get stuck in our ways, but it's super cool when you try something new and it's a success ;-)

My sweet neighbor gave me a bunch of corn yesterday. I had never actually cooked corn myself and I wasn't quite sure how to even go about it. So, after a little searching online, I decided I was going to attempt to grill it... I still didn't have much of a plan though - husk on? husk off? olive oil? seasonings? Since I was pretty clueless, I tried all four ways haha! And they all turned out great.

Now, that I had some cooked corn the next big decision was... what to do with it?? Since I had some fresh tomatoes, lime and black beans, I decided to make a healthy salsa. It was so easy and so yummy! Thanks to my neighbor for giving us the corn that sparked a whole new recipe that will now be a go-to meal!

Grilled Corn & Black Bean Spicy Salsa

What you need:
2 ears of corn (grilled)
1 anaheim pepper (grilled) - optional for added spice
1 can black beans, drained
2 roma tomatoes, diced
1 bell pepper (any color), diced
1/2C chopped cilantro
juice from 1 lime
seasonings to taste: chili powder, sea salt, pepper, garlic powder
optional: 1 ripe, but firm, avocado

How to:
Grill corn and pepper. You can grill corn with the husk on or off. I suggest rubbing a little olive oil on the kernels first, if grilling without husk.

Cut kernels off corn once it's cooled. Chop everything up and combine all ingredients. Enjoy! We had taco salads with lean ground beef and topped them off with the salsa.



Some other serving ideas are...
- Tacos - scoop salsa into corn tortillas
- Dip - scoop it up with some chips and go to town
- Spicy eggs - mix some into eggs and cook on skillet. Wrap up in a whole wheat tortilla
