Some of the best breakfasts are the easiest to make. This one might not look the most appealing, but it sure does hit the spot.
Avocado toast with a side of cottage cheese, gives you filling grains from the toast, healthy fats from the avocado and a nice boost of lean protein with the cottage cheese. I know, I know, this isn't much of a "recipe" but it's an idea and a way to mix things up for those of you who eat the same old thing day after day. I'm not saying that's a bad thing ;-) You may remember several posts back, I admitted to eating the same breakfast (oatmeal) for years.
Here's the fast and delicious "recipe"
Green Toast & Cottage
What you need:
1 slice whole grain bread (I like bread with seeds in or on it)
1/2 ripe avocado
1/2C cottage cheese
salt & pepper
How to:
Duh..... ;-) Toast the bread, mash the avocado w/ seasonings. Spread mixture on bread. Serve up some cottage on the side.
