Some fresh garden ingredients inspired me to make this delish meal tonight.
Thanks to my lovely neighbor for the fantastic tomatoes & Chris' co-anchor for the scrumptous squash!!
This healthy, summer meal was all prepared on the grill... which I love, so the heat and smells stay outside!!
WHAT YOU NEED:
Makes 4 servings
4 chicken breasts
2-3 tomatoes
Mozarella cheese (I actually used 2 string cheeses ;-/ total cheater! ha)
Fresh basil
1 medium yellow squash
1 large sweet potato
2 TBSP olive oil
squeeze of lime, 1 half
salt, pepper, oregano
balsamic vinegar
HOW TO:
Chicken: Season & grill. Once you flip it over, top with cheese, tomato & basil. Grill until cooked through. Before serving, drizzle with balsamic vinegar.
Squash: Slice, drizzle with olive oil, sprinkle with sea salt & pepper. Squeeze 1/2 of a lime over the top. Grill until soft.
Sweet potato: Cut slices in potato & microwave 3-4 minutes until slightly soft. Cut into rounds, about 1/2 inch thick. Lightly drizzle with olive oil & sprinkle with sea salt. Grill until soft.
Serve chicken on a bed of spinach. Top with a little balsamic vinegar. Squash & potato are perfect right off the grill. You can add some cinnamon or ketchup to potatoes, if you like.
