Chicken & Greens Rice Bowl

I've been craving Samuri Sam's, but there aren't any here in Salt Lake ;-(
So I decided to take matters into my own hands & I came up with a rice bowl that's even better. Yes, I said it... better! Waaay less sugar, fresher veggies, organic chicken & mixed grain rice. It was fantastic... not to mention, less expensive than buying an already made teriyaki bowl.

What you need for 2-3 servings:
1 organic chicken breast, diced
1/2 green bell pepper, chopped
10-15 asparagus spears, chopped
2 baby bok choy
1/2C broccoli carrot slaw
2C cooked brown rice (I buy Trader Joe's mixed grain rice, in the freezer section.)
2TBSP soy sauce or teriyaki sauce (Try the Target brand "Market Pantry". It only has 1 gram of sugar!!)

How to:
Pile veggies & chicken into large skillet on medium heat. Cook rice. Add 2TBSP sauce to skillet. Sprinkle on seasonings of choice: pepper, spicy chili powder, salt, etc. Once chicken is cooked through, add rice. Lower heat & cover to 2-3 minutes. Serve up w/ additional sauce if desired.
