Banana Coconut Oatmeal

It's no secret that I LOVE oatmeal and I eat it EVERYDAY!! But, this time around, I tried a little bit of a twist. I made my steelcut oats in a pot on the stove...instead of the slow cooker. I made them plain...just a dash of salt. I wanted to have a simple base so I could add different toppings each day. Usually, I use the slow cooker and I add fruit in while it cooks and I use coconut milk instead of water - which is awesome, but I was feeling more plain this week.

This morning, I scooped out 1C of my plain cooked oats, topped with a dash of almond milk, a little sliced banana, walnuts and unsweetened shredded coconut. It was yummy! I ate it cold, which was actually delicious!!!



I'll keep you posted on any other yummy toppings I try out.

Here's how I made my simple oats...

STEELCUT OATS
What you need:
1C steelcut oatmeal (I like Bob's Red Mill)
3C water
pinch of salt

How to:
Bring water to a boil. Add salt and oats. Reduce to simmer and cover. Cook 15-20 minutes. Stir every few minutes. That's it!!

Top with anything you want! Some people even like to use this as a rice substitute or even as risotto... which I have done and it's AWESOME!!!
