Yummy, HEALTHY Dessert.. Is it possible?

I have tried and failed so many times at making healthy desserts - cookies with applesauce instead of oil & sugar, stevia instead of sugar, protein powder instead of flour, you name it... I've tried it! They've all been massive fails! Muffins that are as hard as a rock, cookies that taste and crumble like chalk, chocolates that... well, actually, my dark chocolates are pretty darn good.  ;-)

My hubby has strongly encouraged me to just stop trying to bake healthy stuff. In fact, I probably shouldn't bake at all! I'm terrible at it. So, I said I'd stop and just stick to healthy meals!

And then.... I tried again haha... and I pretty much failed again, I think. This time they weren't terrible and some sweet people at the party I went to actually said "these are good"... but I'm almost positive they were trying to make me feel better lol! So, why am I sharing this recipe?? Well, I think it could be good haha... with a few adaptations.... one major change? Don't burn them.

Attempt at your own risk.... Here's my OK recipe for 

Chocolate PB Baked "Empanadas"



What you need:
Wonton wrappers 
Dark chocolate peanut butter Jiff (this one has the least amount of sugar when comparing to other chocolate PB spreads)
Optional: shredded unsweetened coconut &/or slices of banana or strawberries

How to:
Preheat oven to 350. Lay out wonton wrappers on dry surface. Place a small spoon of chocolate spread toward one corner, leaving room toward the edge. 

Put any additional toppings on it (in this one, I used PB, banana, coconut and an M&M - this was before trying the chocolate PB spread... which is better). Wet edges of wrappers and fold over. Use a fork to seal wonton. 


Place on baking sheet after spraying with coconut oil Pam. Spray on top of wontons too. Bake 5-8 minutes... until golden NOT dark brown, like mine! I sprinkled some cinnamon on top before serving.
