You don't always have to follow a recipe... sometimes the best meals are simply tossed on the grill with a little salt and pepper. One of my favorites is grilled chicken salad with grilled asparagus and grilled sweet potatoes.... it's a one stop shop - the grill, it's super healthy & oh so good! We always make extras so we can have salads, sandwiches and wraps for days.
So, I don't have an actual recipe for you, but here's what we did...
Chicken: Sprinkle w/ salt, pepper & oregano - grill
Asparagus: Place on a cast iron skillet, drizzle w/ olive oil & sprinkle on some salt and pepper. Place skillet on the grill
Sweet potato: Cut little slices on top & microwave 5-7 minutes, depending on size. (You want it to be soft but not totally mushy). Cut cooked potato into disks. Place on grill - you can drizzle olive oil and sea salt if you want.
Cook everything to your liking... that's it!
I put my chicken on a salad with mixed greens, raw beets, cucumber, tomato & avocado and used balsamic vinegar for dressing.
Tilman's first time eating asparagus was a hit! It's a veggie I didn't think he'd like since it has a strong taste and unique texture, but he loved it!!
*Note to parents.... try try try!! You never know what your kids will like until you try! Expose them to as many different foods as you can (even if it's something you don't like). Good eating habits begin in the first year of life!
