Green Applesauce

Always made by mama and always mixed with greens... that's how Tilman always gets his applesauce ;-) and he loves it! Getting kids/babies to eat veggies isn't always easy. Luckily, Tilman is a lot like me and he likes most veggies, but you can never have too many ;-) so I mix spinach, kale and/or chard into his apples. You can't taste the greens, but they give a powerful punch of health! Mix in a dash of cinnamon for extra yum! If he's coming down with a cold, I'll steam the apples with a chunk of fresh ginger and then remove it before blending. The combo of apples, greens, cinnamon and ginger is a heroic cold-fighter! This healthy snack isn't just for youngsters! It's great for us all!! So stop with the store-bought stuff that's loaded with sugar and preservatives, and take a couple minutes to make your own ;-)



Here's my typical recipe for Green Applesauce:
What you need:
3 apples
1C greens of choice
1tsp cinnamon
optional: 1tsp-sized chunk of peeled, fresh ginger

How to:
Clean, chop and steam apples and ginger on low for about 10 minutes. Add in cinnamon and greens. Steam another 5-10 minutes, until apples are soft enough to blend. Remove ginger and put apples and greens in Magic Bullet, food processor or blender until smooth. Store in air-tight container.
