Tomatoes Tomatoes Tomatoes

Our sweet neighbors posted a sign on the mailbox saying "please help us eat our tomatoes"... Ummm,  that's my kind of favor! I get to "help" them out and feed my family ;-)

Tilman had fun, but kept picking the green ones


My little family took a stroll and picked away... We literally got bags full! So what does one do with this many tomatoes?? We tried some new recipes! We made marinara sauce, salsa & ate them like they were candy ;-)



I don't think I can ever eat a regular store-bought tomato again! Fresh, home-grown, organic tomatoes are unlike any tomato I have ever had... which means marinara from these mouth watering babies was amazing!!! Here's the recipe

BASIC MARINARA
What you need:
6 medium/large tomatoes
2C cherry tomatoes
(You can use any variety of tomatoes)
2TBSP olive oil
2 cloves garlic, minced
1 sweet onion, diced
2TBSP basil (or more)
2TBSP parsley
salt & pepper to taste

How to:
Saute onion & garlic in a large pot w/ olive oil. Chop & blend tomatoes. You don't want them to be totally liquidy so blend lightly. Add tomatoes & all other ingredients to the pot with onion & garlic. Simmer on low for 4-6 hours. Enjoy!

*Try adding mushrooms, peppers, spinach, etc... Get creative!
