I've bought polenta before and it just sat in the fridge until it expired and then made it's home in the garbage... oops! So, I bought it again with the promise to myself of really using it this time... and I did! I first made mozzarella basil bites, then cinnamon disks and then (Yes, I made more... I was on a roll) I made mini pizzas. Tilman is such a fan that he ate all of the leftovers in one sitting. I was planning on using them to feed him for a few lunches, but it turned into a big snack.
What I love about polenta: it's low calorie, very versatile, high in nutrients and a great alterantive to starches like wheat & potato. It's made of corn and tastes a lot like grits, but more solid. Since it is made of corn, I highly recommend getting organic... these days much of our corn is genetically modified unless it's certified organic!
Here's my Mini Polenta Pizza Recipe...
I made them in 5 minutes!
What you need:
Organic Polenta 'tube' (cut into slices about 1/4inch thick)
Marinara sauce
Mozzarella cheese
Basil
How to:
Spray skillet with cooking spray. Place sliced polenta on skillet on medium heat. Cook 2 minutes and flip. Top with marinara, cheese and basil. Cover and cook another 3-5 minutes. Serve
