Greek Beef Stuffed Portabellas

I go through phases where I will get stuck on a few meals that I rotate through. Lately, it's been kabobs and turkey burgers. We've seriously had one of those two meals every night for the past month... ha! I knew it was time to mix things up and get some beef in rotation. As I've said before, I love love Greek food!! I also love lower carb dinners... so these Greek Beef Stuffed Portabellas are perfect! They are filling, yet light... So delicious and easy to make!!



WHAT YOU NEED:
makes 4 servings
1LB lean ground beef (or meat of choice)
4 large portabellas (de-stem)
1/2 sweet onion, chopped
2 cloves garlic, diced
sea salt, oregano, pepper
4TBSP feta
2TBSP olive oil
optional: tomato, basil, balsamic vinegar

HOW TO:
Cook onion, garlic & beef until brown
Pull stems out of mushrooms & brush with olive oil. Sprinkle mushrooms with season salt. Fill mushrooms with beef mixture & top each w/ 1TBSP feta. Optional: Add tomato & basil.
Bake at 400 for 15-20 minutes, until mushrooms are tender. I drizzled some balsamic on top before eating and added a side salad, also with balsamic vinegar. It was fantabulous!!
