Simple, Portable, Healthy, Home-made snack

Don't you get sick of the same old healthy snack options?... PB & apple, protein bar, string cheese, cottage cheese. I sure do. It gets boring. Sometimes I feel like I'd rather just skip the snack since it's so dull ;-( Ha!

So lately I've been making big batches of protein pancakes. I change up the recipe almost every time, just to keep it interesting. These are healthy, easy and portable!

Here's the start of my latest batch...

Strawberry Cinnamon Protein Pancakes


WHAT YOU NEED:
Makes 4 pancakes
1C oatmeal (uncooked)
2 eggs and 2 additional whites or 6 egg whites (remember yolks are good in moderation! They contain a lot of beneficial vitamins and minerals)
1C cottage cheese or 1C unsweetened Greek yogurt
Optional: sliced berries, cinnamon, Stevia, shredded coconut, unsweetened cocoa powder, sliced banana, chopped nuts, etc... Get creative

HOW TO:
Combine all ingredients and cook on greased skillet. I like to top mine with PB or light Laughing Cow strawberry cream cheese ;-) YUM!
