Avocado Lime Beef Bean Tacos

Wow! This meal changed my view of sauce. I've said it before, but as a reminder... I'm not big on sauces or dressings. I think they just cover the taste of the actual food.. the only reason you'd ever want to do that is if the food itself isn't so good. Sauces are also usually packed with junky calories and fat. So, I typically skip the sauce and enjoy the meal. However... tonight, the sauce MADE the meal! As a bonus, the AVOCADO LIME YOGURT sauce is packed with protein & heart-healthy fat.

Tonight's dinner was BEEF BEAN SOFT TACOS topped with the amazing AVOCADO LIME YOGURT sauce. It is a must try and super easy to make.

BEEF BEAN SOFT TACOS 

makes 4-6 servings

What you need:
1LB 90/10 ground beef
1 small sweet onion, diced
1 can whole black beans, drained
salt, pepper, chili powder
optional: chopped green chilies, jalapenos
yellow corn tortillas

How to:
Saute onions for about 5 minutes. Add ground beef and seasonings. Once beef is almost cooked through, add beans and optional additions.

AVOCADO LIME YOGURT
What you need:
1 large ripe avocado
1/2C plain Greek yogurt
optional: 1/4C diced bell pepper, 2TBSP cilantro
garlic powder, season salt, pepper

How to:
Put all ingredients into a blender until smooth.
