A much deserved re-post

I've posted this meal before, but it is sooo delish that I had to share again for those new to my blog. It's the FRENCH TOAST GRILLED CHEESE. I mean, come on... can it get any better than combining these two best childhood meals?

I love grilled cheese, but it's not high enough in protein unless you really pile on the cheese... OR, if you add an egg. By adding an egg to the bread (as french toast), you get an extra gooey texture without an eggy taste that takes over.

After creating this sandwich, I was so impressed (pat on my back ;-) ha)... that I sent it to Oxygen Magazine. They loved it too and even published it in their fit nutrition section. So, there you have it. It's not only delicious, but also healthy!!

Today, I served my sandwich with sauteed brussels sprouts, spinach, tomato & golden beets. I typically just throw whatever veggies I have, in the skillet after cooking the sandwich.



FRENCH TOAST GRILLED CHEESE
makes 1 sandwich

What you need:
2 slices whole grain bread (I like bread that has seeds or nuts in it)
1 egg
1 string cheese
salt & pepper to taste
optional: 1 slice turkey bacon

How to:
Whip egg & seasonings in bowl. Dip 1 slice bread in egg & place on greased (Pam) skillet. Cook both sides. Set aside and repeat w/ second slice. Place cheese in the middle and return to skillet on LOW. I cover with a lid so the cheese really melts.
If you want to add some veggies... throw them into the skillet after you remove the sandwich.
