Sweet & Spicy Stuffed Sweet Potatoes

Amazing doesn't even begin to explain how delicious this meal was!! There's a bit of spice, a punch of tang, a little crunch and a cool sweetness to these sweet & spicy stuffed sweet potatoes.



Until tonight, I have always viewed sweet potatoes as a yummy side dish or a dessert. I never really thought about turning the nutritious root vegetable into a main dish... but by adding in ground turkey, veggies & cheese.. you get all the main food groups in a very yummy way!

I stuffed my sweet potatoes with ground turkey, mushrooms, red pepper & spinach... then topped with low-fat mozzarella. For those vegetarians, you can skip the meat and add more veggies or use a meat substitute. Other options are chicken or lean beef.

Here's my delightful recipe...

SWEET & SPICY STUFFED SWEET POTATOES

What you need:
3 medium sweet potatoes
1LB ground turkey
1C chopped mushrooms
1/2 red bell pepper
3C fresh spinach
3/4C low-fat mozzarella cheese
1 lime
spices to taste: chili powder, sea salt, pepper, oregano, chipotle pepper

How to:
Preheat oven to 350. Wash sweet potatoes and poke holes all around them. Bake 50-60 minutes.
Heat greased skillet. Add meat and veggies. Season to taste. Set aside.

When sweet potatoes are done, let cool and cut in half. Scoop out some of the middle, leaving about 1/2inch-1inch of potato inside so it stands strong (you can use the scooped out portion for another meal or side). Brush skins with olive oil and season with chili powder, sea salt & lime juice. Bake another 5-10 minutes.

Remove potatoes and fill with cheese/veggie mix. Top with cheese and return to oven for 10 minutes until cheese is melted.
