I've been loving my slow cooker these days. Experimentation has lead me to some delicious recipes... like this, Apple Pie Oatmeal. The house smells like Christmas & this breakfast tastes like dessert. It makes waking up even more exciting ;-)
I made a big batch so we had a quick and easy meal for days.

SLOW COOKER APPLE PIE OATMEAL
What you need:
2C steel cut oats
2-3 granny smith apples - cored, peeled, chopped
2C unsweetened vanilla almond milk
2C water
1TBSP vanilla
Cinnamon to taste (I like a lot)
Optional: 1/2C wheat germ
How to:
Combine all ingredients in crockpot. Cook on low for 6-8 hours. If you're not cooking overnight, check every 3-4 hours and add more water if needed. Otherwise, you'll be fine to leave it overnight long as you cook on very low setting.
Optional Toppings:
2TBSP Greek yogurt, after re-warming in the morning
1-2TBSP crushed walnuts
Additional cinnamon
1TBSP honey or other sweetener
