Pineapple BBQ Chicken

My latest crockpot creation is this versatile dish... Pineapple BBQ Chicken.



I actually don't really like BBQ. I don't particularly love sweet with meat. So, I orginally made this chicken intending for it to be used in my hubby's lunches. I figured I could make it into salads, wraps, tacos, pizza, etc. With this, he could eat all week.

Well, he loved his BBQ Pineapple Chicken Wrap so much that I figured I better give it a whirl. Tonight, I added a spicy flare by adding hot sauce instead of additional BBQ sauce. I put the chicken, onion and pineapple in two corn tortillas... and topped with avocado, peppers, cabbage and hot sauce. Yum!!



I made my husband a pizza on a whole wheat pita. I used low-sugar BBQ sauce, mixed cheddar/mozzarella cheese & topped it with the chicken, pineapple & onions from the crockpot dish. Oh, and I sliced up some red bell pepper. Construct and broil on low for 5-8 minutes.



So, you can see just how much you can do with this simple crockpot creation. Here's the recipe. Get creative with it.

PINEAPPLE BBQ CHICKEN
What you need:
2 chicken breasts
3/4C water
1/2 sweet onion
1C diced fresh pineapple
2TBSP low sugar BBQ sauce

How to:
Combine all ingredients in crockpot. Put chicken in first and lay onion & pineapple on top.
Drizzle BBQ sauce and water over chicken. Add any spices you'd like. Cook on medium for 3 hours. Shred chicken with a fork (it should fall apart very easily). Turn heat down and cook an additional 30-60 minutes.
