My husband, on the other hand, hates them! So I know some people will like this recipe and some won't... and that's ok ;-) Still read on, cause you can actually swap the eggs for something else....
I was really wanting a tuna sandwich, but since I'm prego, I'm supposed to stay away from the canned fish. But the craving was sucking me in... that's when I decided to mix my love for hard-boiled eggs with my favorite tuna recipe. Here's where those egg-haters come in ;-) You can use this same recipe, but skip the egg and use tuna, canned salmon or even chicken.
EGG SALAD SANDWICH
Makes 1 serving
What you need:
2 hard-boiled eggs (you will only use 1 yolk)
1 stalk celery, diced
1TBSP chopped bell pepper (we buy the mini peppers so we can use them easily in all kinds of meals. Here I used 1 mini pepper)
1 pickle spear, chopped
salt, pepper, paprika to taste
1-2TBSP plain Greek yogurt or light miracle whip
1tsp yellow mustard
spinach
2 slices whole grain or Ezekiel bread (If you have gluten sensitivities, skip the bread and put this mixture on a big salad. To make it more filling, keep the second yolk in the recipe.)
How to:
Chop egg and discard one of the yolks. Combine all ingredients except bread & spinach. Mix well.
Toast bread and top with spinach leaves. Pile on the egg salad, top with second slice of bread & consume ;-)
