It has a weird name...it's hard to pronounce, confusing to spell & impossible for me to remember... but it is delish! Ever heard of Korean Bibimbap?
Here's the actual definition: Bibimbap is a signature Korean dish. The word means "mixed rice". Bibimbap is served as a bowl of warm white rice topped with sauteed vegetables and chili pepper paste. A raw or fried egg and meat (usually beef) are often added.
When I first heard of this... I must admit that I wasn't too appetized. It sounded strange, but I've learned strange can be good! This odd named dish is surprisingly fantastic! I created a bibi-blah blah of my own. Here's the recipe. Remember, the meal can be tailored in many different ways.
GROUND BEEF BIBIMBAP
makes 4 servings
What you need:
1LB lean ground beef
1 zucchini, cut into matchsticks
1/2C sliced eggplant
1C mushrooms
1/2C shaved brussels sprouts
1C shaved carrots
3TBSP low-sodium soy sauce
2TBSP chili paste, like Sriracha
1TBSP peeled, minced fresh ginger
1 clove minced garlic
4 eggs (option as a topping)
1C uncooked brown rice (you can use white, but brown is of course healthier)
How to:
Prepare rice according to the package. Spray a large skillet with non-stick spray. Add veggies, ginger and garlic w/ 2TBSP water. Cover for about 3 minutes to lightly steam. Add meat, soy sauce & chili paste. Cook until meat is brown. Remove from heat. Fill your bowl with about 3/4C rice, top with meat & veggie mixture. In meantime, cook an egg in the same skillet & place on top of meat, veggies & rice.
