I've never had a "real" falafel. I'm not a fried food eater so I've just never tried it... but I do make my own healthy version and I love them... So does my hubby, who is a "real" falafel lover, so that's saying something... I think LOL.
These tasty bites are pretty simple to make and oh-so-good! Our 21 month old son chows them down too. I like to serve them as the star of a Greek platter - with a salad, homemade tzatziki sauce, olives and pita. Here's the scoop...
BAKED FALAFEL
What you need:
1 can drained chickpeas
2-3 cloves minced garlic
1/4C fresh chopped parsley
1/2 small yellow onion, diced
salt & pepper to taste
How to:
Mash all ingredients together or put into a food processor. Mash well.. but it's ok to have some chunks of chickpeas.
Preheat oven to 400. Spray a cooking sheet with Pam. Form chickpea mixture into patties and place on sheet. Brush tops with olive oil and bake 20 minutes. All done!
TZATZIKI SAUCE
What you need:
1/2C Greek yogurt
Juice from 1/2 lemon
1tsp garlic powder or more if you'd like
1/4C chopped cucumber
1TBSP chopped mint
How to:
Mix well
