Healthier Turkey Day

This year I am going to attempt... ATTEMPT to make a full Thanksgiving dinner with all the fixings... but done healthy! Here's our menu...

TURKEY BREAST:
We bought an organic bone-out turkey breast, since we are only feeding 4 we don't need a full turkey
Prep: Baste with olive oil, salt, pepper, rosemary, garlic powder
Bake 350 for 90 minutes (2-3LB turkey breast)
*You can place this in a large dish with the veggies, so the veggies catch the juices

ROASTED VEGGIES:
green beans, brussels sprouts, carrots, sweet potato (cut into slices)
- Drizzle with olive oil & lemon juice. Top w/ sea salt & chili powder
-Bake at 400 for 40 minutes


CAULIFLOWER MASH
1-2 heads of cauliflower, cleaned and cut into florets
-Steam
-Puree in blender or food processor until smooth. Add in sea salt & a little butter. You can add some rosemary, too
*I'm going to make this ahead of time, refrigerate and then warm in the slow cooker

CORNBREAD STUFFING
-OK... I cheated! I don't like stuffing, so for my hubby, I just bought Trader Joe's pre-made cornbread stuffing ;-/

CRANBERRY GREENS SALAD
spinach, slivered almonds, unsweetened dried cranberries, feta cheese, balsamic vinegar as dressing

APPLE PIE CUPS
3-4 red apples (any variety) - diced, cinnamon, pumpkin pie spice, wonton wrappers, light cool-whip
-Place apples and spices in a large pot and cook on low. Add 1/4C water. Cook until they're slightly soft. Use a muffin tin - spray with Pam. Place 1 wonton wrapper in each muffin spot to create a "cup". Fill with apples and bake at 350 for 10-12 minutes... until wontons are golden. Top with light cool-whip
