Low Carb High Nutrition Spanish Rice

I love all the things you can do with cauliflower. This highly nutritious veggie has long been overlooked and primarily used in veggie trays with ranch. But these days, it's taking centerstage in many dishes & kicking out potatoes, rice & much more!

Today, I tried my hand at Cauliflower Spanish Rice which I will top with Crockpot Chicken Fajitas.
My house smells delicious and the rice is awesome! It's so simple, too!


CAULIFLOWER SPANISH RICE
What you need:
1 head cauliflower, grated or chopped in food processor
1/2 sweet onion, diced
1/2 can diced tomatoes w/ green chilies
1 clove garlic, crushed
1TBSP lime juice
1TBSP olive oil
1TBSP chili powder
1tsp cumin
salt & pepper to taste
Optional: cilantro, peppers of choice

How to: Saute onion & garlic in olive oil. Add all other ingredients and cook 5-10 minutes until "rice" is the texture you like. Enjoy alone or top with meat or veggies of choice.
