Travel the world with your taste buds!

I've always wanted to go to India.. and one day we will! There are just so many places in the world that I want to see... it's kinda haunting to think how huge this world is and that it is impossible to see it all. I crave travel! It's my passion! New places, faces, foods, cultures, animals, wonders, etc... I love it all!! One of my favorite parts is trying the local fare - I've had Greek salads while over looking the Aegean Sea, chomped into a worm in the middle of Africa (not yummy), sipped green tea after hiking the Great Wall, ate sushi made by a REAL "Itamae" and more... but it's still  not enough! These experiences make coming home to American food and American culture seem pretty bland. Don't get me wrong, I love America and I'm thankful to be born in this country... but we can learn so much from the world around us.

So... since our trip to India has yet to come, I decided to explore with their unique favors and combos. Tonight, I made Coconut Chicken Curry over Basmati rice. It was soooo good and sooo different! All of the spices mixed together with chicken, garbanzos and sweet potato was amazing!! This meal is a crockpot special ;-) All you do is prep it and serve it!

COCONUT CHICKEN CURRY
Makes 4 servings

What you need:
2 large chicken breasts
1 can lite coconut milk
1 can garbanzo beans
1 large sweet potato, peeled & cubed
1 red pepper, chopped
1 medium sweet onion, diced
2TBSP curry powder
1TBSP tomato paste
1TBSP chopped fresh ginger
1tsp ground cumin
1tsp sea salt
2TBSP hot sauce (optional) - I used Frank's Red Hot - haha.... really Indian lol

How to:
Pour milk into slow cooker. Add all other ingredients on top. Flip chicken around a few times to coat with spices. Let cook for 4-6 hours on low heat. Once chicken is done, shredded and place back into slow cooker for an additional 30-60 minutes on low to let flavors settle in. Serve on top of cooked Basmati rice (cheat: by Uncle Ben's pre-made package. All you have to do is microwave for 90 sec.)

*This can be made into a vegetarian meal, by eliminating chicken and adding in an additional can of garbanzo beans and another sweet potato.

  1. I made this yesterday. So easy and so good!! To make it Paleo I took out the garbanzo beans and served over a bed of spinach instead of rice. Yum yum!
