Chili Lime Chicken Burgers

Here's a new twist on burgers... healthy chicken patties with a little zing zang!

My husband didn't seem too keen on the idea of these at first. He's more of a "real" burger guy... meaning beef, bacon, mayo, cheese.. you get the idea. But I, of course, wanted something healthy with unique flavors. So, I went ahead and made these simple Chili Lime Chicken Burgers. After one taste, my hubby couldn't stop raving about them ;-) ha!

From start to finish, this meal takes about 15 minutes. I was pleasantly surprised cause I was starving when I began the project...

CHILI LIME CHICKEN BURGERS
Makes 4 servings

What you need:
1LB lean ground chicken (can sub turkey)
1/4C red bell pepper, diced (I used mini red & yellow peppers)
2TBSP chopped cilantro
1/2 lime, squeezed
1tsp chili powder
salt & pepper to taste
slim buns or pita pockets

How to:
Combine all ingredients (except buns) in bowl. Make 4 regular or 8 mini patties. I did mini ones because we had pitas (no buns), so 2 mini burgers fit better in a pita... plus they were so cute ;-) Next time I'm going to make mini buns and use these patties to do sliders.
Ok... so how to: .... after forming patties, cook on a greased (Pam) skillet. Flip and cook until chicken is no longer pink - about 5 minutes per side.

Place patty or patties on bun or in pita. Top with avocado, tomato, lettuce & low-fat pepper jack cheese. We ate with a side of steamed broccoli.



Optional sauce:
Spicy "Mayo"
makes 1 serving

Combine 1TBSP low-fat mayo, miracle whip or Greek yogurt with 1tsp chili lime tabasco sauce. Done!

  1. Love these, and so did my boyfriend. I put it on a bed or arugula with a little goat cheese and it was delish...highly recommend and super easy to make.

  2. I have made these like 5 times now! Since we're not eating bread, I roll them up into meatballs and they are delish!
