Spicy Thai Beef Noodles

Since moving to Salt Lake, we've been on the hunt for a great Thai restaurant... but we haven't found it, yet. My hubby and I like authentic, "hole-in-the-wall" places.

In Seattle, we used to frequent a little place that was inside of a house. It was so cute and quant. So until we find our spot in SLC, I'll turn our house into that hole-in-the-wall Thai spot.

Check out this Spicy Beef Thai dish! It's soo good and really fast & easy to make.


SPICY THAI BEEF NOODLES
What you need:
1LB sirloin steak, sliced
1/2LB asparagus spears
1/2C sugar snap peas
1C broccoli
1/2 sweet onion
2TBSP low sodium soy sauce
2TBSP rice vinegar
2TBSP hoisin sauce
1TBSP spicy Thai chili sauce or paste
1TBSP diced fresh ginger
1tsp garlic powder or 1TBSP fresh garlic, minced
Optional: 3/4C cooked soba noodles, brown rice or other noodle of choice.

How to:
Combine soy sauce, rice vinegar, hoisin sauce & chili sauce in a small bowl.

Coat skillet with non-stick spray or 2tsp peanut oil & heat. Add ginger, onion, garlic and beef - brown. Add asparagus, snap peas & broccoli. Top w/ sauce. Reduce heat and cover to allow veggies to steam & flavors to mingle. Simmer until meat is cooked and veggies are tender - about 10 min.

I served our beef & veggies on top of deliciously, healthy soba/buckwheat noodles. I topped with 2tsp flaxseeds for a crunch & flavor that resembles sesame seeds.

  1. Yum. I heard that Salt Lake City isn't exactly diverse. Noodles look great. Love Soba.

  2. Try the Tea Rose Diner. Its got a wicked good curry! Don't order higher than a 1 or 2 or it will be too spicy! This look yummy, I will have to try it!
