Cherry Almond Greatness

Wow! I think this oatmeal mix is my favorite yet! The sweet, tart combo from the cherries, the nutty crunch from the almonds & the smooth delicious oats cooked in coconut milk are unbeatable!

You really have to try this one!!

As usual, I made this amazing breakfast in the slow-cooker so we have 8 servings to last for days. Tomorrow I'm going to add cocoa powder to make it a chocolate treat... I can hardly wait haha! Sounds kinda pathetic to be so excited for breakfast, but hey... start your day off with a smile ;-)

So here's the simple, amazing recipe...



CHERRY ALMOND STEELCUT OATMEAL
What you need:
2C uncooked steelcut oats (Bob's Red Mill makes a gluten-free version)
3C unsweetened almond, coconut, soy or skim milk (I used unsweetened vanilla almond coconut)
2C water (or skip this and use 5 cups almond)
2C frozen cherries (check ingredients to make sure there's no added sugar)
1/2C crushed almonds
1TBSP vanilla extract
Optional: 1TBSP almond extract
Optional add ins: cocoa powder, unsweetened shredded coconut

How to:
Combine all ingredients in crockpot and cook on low for 6-8 hours.
Add more water or coconut milk if it's starting to get dry.
Before serving add additional cherries and almonds
Optional add ins: 1 TBSP unsweetened cocoa powder, unsweetened shredded coconut, and/or cinnamon

  1. I've been trolling your blog and I have to admit, I am getting excited to try your oatmeal recipes!! I'll try one with rice milk to see if it turns out. Now, which one should I make first...

  2. Goodie!! I'm a HUGE oatmeal fan!! I once ate it for every meal for like 3 days LOL! There is so much you can do with it. So far, my favs are the cherry almond & the blueberry ricotta. My husband's fav is the apple pie oats. They are all amazing, though and I'm constantly trying new combos to pass on to you all! Let me know what you think!

  3. I finally got around to making this! It was really good! It was so nice to wake up and have something warm to eat! I cheated and sweetened it with honey. I loved the crunchy almonds too! It was a good one! Two thumbs up!

  4. Honey is not a cheat! We add honey to ours sometimes, too! It's the perfect NATURAL sweetener. These oats are also yummy with a TBSP of unsweetened cocoa powder.
